甘薯提取物(wù)(甘薯紅)是從紫甘薯中(zhōng)提取的花(huā)青素混合物(wù)。花(huā)青素是植物(wù)中(zhōng)常見的一類生物(wù)活性物(wù)質(zhì),除了具(jù)有(yǒu)抗氧化功能(néng)外,還可(kě)以在酸性條件下呈現穩定鮮豔的紅紫色,在中(zhōng)性時則變為(wèi)紫色,堿性較強時變為(wèi)藍色或綠色。甘薯紅耐熱耐光性都很(hěn)不錯。
典型應用(yòng):軟飲料,餅幹夾心,果凍,水果軟糖等。
使用(yòng)方法:将适量甘薯紅溶解于pH約為(wèi)3左右的酸性溶液中(zhōng),再添加到目标産(chǎn)品中(zhōng)。
SWEET POTATO RED is a mixture product of anthocyanins which is extracted from purple sweet potato. Anthocyanins is referring a sort of biologically active substances in plants, not only having anti-oxidation function, but also giving stable bright purple red color naturally. Anthocyanins change color shade from red to purple when the environment changes from acidic to neutral, and finally goes to blue or green when in alkaline environment. Anthocyanins are stable only in acidic environment. Purple sweet red has a good stability to light and heat either.
Typical application: soft drinks, cookies fillings, jelly, confectionary, etc.
Using method: pick requested amount of Sweet Potato Red and dissolve in acidic water around pH 3, then add the aqueous solution into the end product.
